Which are the characteristics of certified Valcalepio ?
A wine can receive the appellation of Valcalepio DOC only if the sensory analysis committee judges it, following the codified rules, as adherent to the characteristic profiles of figure 1, 2 and 3.
The product can receive the certification when its profile do not differ from the standard for at least 7 descriptors (in the case of Valcalepio Bianco) and 8 descriptors (in the case of Valcalepio Rosso and Moscato Passito). The reliability of the judgement is also taken into consideration: the test is considered valid only if the variation value of 70% of the considered parameters is minor to the maximum admissible parameter. The wine gains the certification only with 5 correct judgements.
